Our favorite restaurant in the Petaluma area is Namaste Kitchen. The best Indian food ever. We have been ordering the same thing for the last year (or so it seems) – saag paneer, chicken korma, and garlic naan. I’m getting hungry just thinking about it.
This evening, I decided to change things up a bit and cooked my first Indian dish at home. Chicken tikka masala. I used this recipe. It may not be authentic, but it was simple to fix and really, really tasty.
When my husband came home, he said, “it smells like Namaste in here”. Hehe. *grin*

Oh, and I received an another order via Etsy – yay!

I am so happy! I received my first fabric request via Spoonflower. I love that she wants to make aprons and kitchen curtains out of this fabric. What cute ideas!

A spinach smoothie for the warmer months – add one frozen banana, as much spinach as you want, almond milk, and one tablespoon of cocoa powder and blend!

Husband and I took a walk to the local nursery, King’s Nursery, over the weekend. Quickly snapped a few shots of my favorites. Has anybody tried this before?

It feels like I have been baking non-stop for the last three weeks – crazy! One of my favorites so far has been the Toasted Coconut Muffin recipe via Epicurious. I altered the recipe slightly – see below for details.

Toasted Coconut Chocolate Chip Muffins
1 1/2 cups all-purpose flour
1 cup sweetened shredded coconut, toasted
1/2 cup sugar
1/2 cup semi-sweet chocolate chips
1 1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1 cup canned unsweetened coconut milk
2 large eggs
1/4 cup unsalted butter, melted
1 tsp vanilla
Preheat oven to 400˚F. Grease muffin cup pan. Combine flour, toasted coconut, sugar, chocolate chips, baking powder, baking soda, and salt in a large bowl. In a medium bowl, whisk coconut milk, eggs, butter, and vanilla to blend. Add egg mixture to flour mixture and stir until combined.
Divide batter among prepared muffin cups. Bake until tester inserted into center comes out clean or 15 minutes. Turn out onto rack and cool.
